What dish can make any man or woman ache for the touch of Jon Favreau? Pasta Aglio e Olio is the dreamy midnight snack that lives up to its porny portrayal in the foodie-comedy-drama "Chef". Recipe below!

RECIPE

*Ingredients*

1/2 head garlic, separated and peeled

1 bunch parsley, rinsed

1/2 cup good quality olive oil

1 tsp red pepper flakes

1/2 lb dry linguine

1/2 lemon

*Method*

Heavily salt a large pot of water, and bring to a boil. Cook pasta to al dente while completing the steps below.

Slice the garlic cloves thinly, and set aside. Pick the parsley leaves from their stems, and finely chop. Add olive oil to a large sauté pan, and heat over medium flame until shimmering. Add sliced garlic, stirring constantly, until garlic is barely toasted. Add the red pepper flake and remove from heat.

Add the pasta, drained, with about 1/4 cup reserved pasta cooking water. Add lemon juice and parsley, and toss to combine. Season for salt and pepper, and serve.

Add mashed avocado when the garlic is cooked for making Avocado Pasta, it makes this dish so much better if you like Avocado.

The shake garlic trick works better if smash the garlic a bit first. Try a heavy pot or pan.

For those who don’t know, another affective way to peel garlic is take the flat side of the knife place it on top of the garlic and whack the knife to smash the garlic which makes it really easy to peel

Maybe i just dont like olive oil. But its not really that good. However. Starting spaghetti like this than adding sauce makes better spaghetti than just plain noddles.

Basically this is our go-to way to make pasta for a long time in our family except with basil in the oil at the start and a lot more of it being cooked at once since I'm feeding a family of four.

@Ellie Wickham Fresh basil, start it at low heat until things soften up and infuse into the oil and then raise heat just a bit before adding the pasta. The garlic is easier to burn than the basil in my experience.

Don't do it like an American and look for aglio olio e peperoncino by any Italian youtuber.
You can tell the ingredients by watching it (much less garlic and u work it differently to avoid heavy and bitter taste, olive oil, chili)

maybe you are burning your garlic? try to use medium-low heat when cooking it because the garlic can turn out bitter and nasty if overcooked

I tried making the recipe 3 times now...the first two were very good but i didnt add enough lemon the tird time i added just right and it changed the dish completely...it was the best pasta that i made in a very long time very nice
